Turkey Meatloaf & Buffalo Cauliflower

This is another first for me. I love meatloaf, but find the bee version heavy at times...especially when you add gravy. For this recipe, I made sure to include a lot of stuff and it turned out moist and incredibly flavorful. This one was a hit. I also made two different sauces. One to mix into the loaf and another for on top of it. It's quick to make, but it spent 50 mins in the oven at 375-400. I did cover it the last 20 mins.


MEATLOAD INGREDIENTS

  • 1/4 cup Ketchup & HP Sauce mixed together (British steak sauce found everywhere)

  • 2 tsp Worcestershire sauce

  • 1 Yellow onion minced

  • 1 tsp olive oil

  • 1/2 Green Bell Pepper minced

  • 1/2 Orange or Red Bell Pepper Minced

  • 5 Large mushrooms minced

  • 1 lb ground turkey

  • 1 cup seasoned breadcrumbs (You can use more if you want)

  • 1 large egg

  • 1 tbsp dried Oregano

  • 1 tbsp Thyme

  • 4 Garlic cloves crushed

  • 1 teaspoon kosher salt

GLAZE INGREDIENTS

  • 2 cups spice BBQ sauce

  • 4 tbsp Worcestershire sauce

  • 1/2 Cup Ketchup


INSTRUCTIONS

  • Preheat the oven to 400F.

  • In a skillet add the bell peppers, some olive oil and the onions and cook for 4 mins. Then cool for 10 mins.

  • In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.

  • In a large bowl combine the turkey, cooled veggies, breadcrumbs, egg, 1/4 cup ketchup, salt, mushrooms and all the spices.

  • Place mixture into a large pan and shape into a loaf...I places potatoes and carrots around the edges. Spoon sauce on top.

  • Bake uncovered for 55-60 minutes, then remove from oven and let it sit for 5 minutes before slicing.

CAULIFLOWER INGREDIENTS/DIRECTIONDS

  • 1 Large head of Cauliflower

  • 3 Cups Frank Buffalo Sauce

  • 4 Garlic Cloves Minced

  • 4 Tablespoons Avocado Oil

  • Salt to Taste

PUT IT ALL IN A SKILLET AND TOSS AND MIX IT OVER MEDIUM HEAT FOR 5 MINS...THEN COVER AND COOK FOR 10 MORE AND THEN SERVE!

Especially love when you do the vegetarian recipes!! Can't wait to make the cauliflower you made!! It all always looks so good! You definitely need to publish a cookbook :-)
