Mashed Parsnips

So this one is a new one for me. I had never made parsnips before in any capacity, so why not?...Right?? So, I figured let's mash them up and i'll do a rooted vegetable steam. So here's how I did my Mashed Parsnips that was a hit!!


INGREDIENTS


  • 6 large parsnips, peeled and cubed

  • 4 cups of milk (milk of your choice)

  • Salt and pepper

  • 1 tablespoon of garlic salt

  • 1 cup of greek yogurt

  • 2 tablespoons of butter

  • 1 tablespoon of rosemary

  • 1 tablespoon of green onion

  • 1 teaspoon of dried thyme


Boil in water the peeled and cubed parsnips with a teaspoon of salt. About 15 minutes later they should be soft enough to easily stick a for into it. Put the boiled parsnips into a blender or food processor. While in the blender add in 4 cups of milk, 1 teaspoon of salt, 1 tablespoon of garlic salt, 1 cup of greek yogurt, 2 tablespoons of butter, tablespoon of rosemary, tablespoon of green onion, 1 teaspoon dried thyme, and salt and pepper to taste.


All ingredients should be blended together. Add more milk or yogurt if necessary to make it more creamier.
