Halibut with Macadamia Crust

This one came on a whim. There was some fresh halibut at the store and I decided to make my own creamy covering and then add some homemade slaw. Tamera...the Green Queen...put some onions and garlic in the spinach to finalize the meal. It was healthy and yet filling and had a ton of flavor!


Ingredients

  • 2-3 Halibut steaks about 1/2 pound each

  • 2 tablespoons lemon butter

  • 1 cup macadamia nuts

  • ⅓ cup chopped fresh parsley

  • ¼ cup Thrive Oil

  • ¼ cup Olive Oil

  • 2 tablespoons minced garlic

  • 1 teaspoon sea salt

  • 2 tablespoons of garlic spread

  • ¼ teaspoon ground black pepper

Directions

  • Step 1 Using avocado oil, grease the bottom of a cast iron skillet and heat on med/high

  • Step 2 Rub the fish with avocado oil and place the fish into the hot skillet

  • Step 3 Scoop and spread the macadamia mixture over the top of the fish

  • Step 4 Cook for 10-15 minutes depending on the thickness of the fish

  • Step 5 Broil the Halibut in the oven on high for 3-4 minutes to crust the top of fish halibut

  • garnish with parsley and serve

For Macadamia spread

  • Put nuts, Thrive and Olive Oil, minced garlic, salt, pepper, garlic spread and lemon butter into a food processor and blend. Add more oil to reach the consistency you desire. Also taste for salt or lemon additions...it's all up to you!


FOR THE SLAW

This is easy...toss all the ingredients in a bowl...premix the vinegar and agave/honey and dry mustard. Then pour it over the slaw and mix together. Garnish with crumbled blue cheese.


INGREDIENTS

  • 4 cups shredded green cabbage

  • 2 cups shredded red cabbage

  • 1 cup shredded carrots

  • 1/4 cup apple cider vinegar

  • 4 Tablespoons of honey or agave

  • 1/4 teaspoon dry mustard

  • 1/4 teaspoon sea salt

  • Crumbled Blue Cheese for garnish
