Corn Salad

We had our Caribbean Night and the jerk chicken was on point and spicy as can be! So with that, you want a nice and refreshing and crisp salad so as to not overwhelm the palate and thus balance the taste buds. This was my first corn salad and it was a hit....we enjoyed it the next day for lunch all by itself. I used fresh corn and just blanched it can use defrosted as well....the sweeter the better...but you want it firm. You literally just toss all these ingredients is that EASY!

INGREDIENTS -4 cups fresh or frozen corn (defrosted) -1 cup cherry tomatoes, halved

-1 cup red onions chopped

-1 avocado chopped -1/2 cup crumbled feta -1/4 cup of chopped basil

-1 Lime juiced

-1/4 cup apple cider vinegar

-coarse sea salt to taste

-garnish with Cilantro
